I have a great customer that frequently requests knife designs from me. these are one of his projects, and remain one of my favorite knife sets to date. He asked for a large and medium set of “Persian Skinners”. He and I are big fans of W2 Tool Steel, and I feel it would be wrong if you didn’t do a differential Heat Treat and polish out that hamon!! Right?
